Trout with almonds
Fry the fish and wipe the pan clean. Keep warm while you fry a sprinkle of flaked almonds in a knob of milk-free margarine. Squeeze fresh lemon juice over the fish and cover with the fried almonds.
Baked trout
Put the fish into a well-oiled dish and sprinkle with dried tarragon and 1 to 2 tablespoonsful of white wine. Bake and serve with the juices.
Trout with herbs
Coat the fish with cornflour (cornstarch) and fry. Keep hot while you heat a generous knob of milk-free/wheat-free margarine in a small pan. Squeeze in the juice of ¼ of a lemon and ½ a level teaspoonful of mixed herbs. Mix well, pour over the fish and serve.
